TOMATO NOODLE SOUP



Serves : 5
Preparation Time : 20-25 min
Cooking Time : 1hr

You need :

Tomato : 3 large
Noodles : 50g (half a cake of maggi will do)
Onion : 1 medium
Green Capsicum : 1 small
Red capsicum : 1 small
Cabbage : 50g
Carrot : 1 medium
Garlic : 4 pods
Celery Spring onion : 1 small bunch
Pepper powder, Salt to taste
Water as required

Method :

To make tomato paste :

Cut the tomatoes into halves and boil in water. When the skin turns pale take the tomatoes out of water and immediately put in cold water. When cooled, peel the skin off and grind in a mixer to make a thick paste.



Chop all the veggies and saute well in a heated oily pan. Then add required amount of water, noodles and tomato paste. Sprinkle salt and pepper powder and boil. Dissolve a tbsp of corn flour in a bit of water and add it to make the soup thick. Simmer till required thickness. 



Serve hot with vinegar.

CUTLET




Makes : 6
Preparation time : 20-30min
Cooking time : 15-20min


You need :

Boneless chicken\beef : 1 cup (optional)
Onion : 2 large
Potato : 2 large
Carrot : 2 large
French beans : 50g
Cabbage : 50g 
Green peas : 1 cup
Garam masala powder : 1 tbsp
Green chillies : 5
Crushed pepper : 1 tbsp
Egg white : Of 2 eggs
Bread crums
Salt to taste, oil to cook

Method :

Pressure cook the meat with some salt, potato, green peas and water. Take the cooked meat and drain all the water. Beat the meat in a mixer and make a paste. Mash the potato and add to the paste. Heat oil in a pan and saute the chopped carrot, green chillies, pepper powder and onion for 5min. Take a bowl and add the meat - potato paste and cooked veggies and mix well.


 
Make cutlets in required shape using a mould. Brush egg white over the cutlet and dip in bread crums. 





In a frying pan add oil and heat well. Deep fry the cutlets in low flame till it turns golden brown colour or till its cooked well. Serve hot with tomato sauce.




ps : if you dont deep fry in low flame, the inside of the cutlet wont be cooked well. Dont be decieved of what you see outside for outer portions cooks very fast.

DUCK CURRY


preparation pretty similar to beef roast except the fact that duck curry contains more gravy. 

Serves : 6
Preparation time : 20-30min
Cooking time : 30-40min

You need :

Duck : 1kg
Coconut milk : 2cups
Crushed pepper : 2 tsp
Turmeric powder : 1/2 tsp
Coriander powder : 2 tbsp
Red chilli powder : 1 tbsp
Onion : 4 large
Green chillies : 10
Ginger : 4 medium
Garlic : 6 pods
Garam masala powder : 1 tbsp
Curry leaves
Oil to cook, Salt to taste

Method :
Chop the duck into small pieces. Add turmeric powder, salt and water to it and pressure cook for 4 whistles. 



Take a pan and heat oil. Add ginger, garlic, green chillies and chopped onion and saute till onion is golden. Then add all the powders one by one and cook. Finally add pepper and salt.



Add cooked duck and mix with the sauted veggies. Then pour coconut water to the mix and allow to simmer. Keep it like that for 10 minutes. If the curry became too thick, add 1/4 cup water and stir for 5 min. 
Transfer to bowl, garnish and serve.

BEEF ROAST WITH TENDER COCONUT



Serves : 6
Preparation time : 20-30 min
Cooking time : 30-40 min

You need :

Boneless Beef : 1kg
Tender coconut : 1 cup chopped
Onion : 4 large
Green chillies : 10
Ginger : 4 medium
Garlic : 6 pods
Crushed pepper : 2 tsp
Turmeric powder : 1/2 tsp
Coriander powder : 2 tbsp
Red chilli powder : 1 tbsp
Garam masala powder : 1 tbsp
Curry leaves
Oil to cook, Salt to taste


Method :


Wash the chunk of meat nicely and cut into small pieces. Drain all water and put into pressure cooker. Add salt and turmeric powder. Pressure cook for 3 whistles or till it is done.




Take a pan and heat oil. Add ginger, garlic, green chillies, tender coconut and chopped onion and saute till onion is golden. 



Then add all the powders one by one and cook. Finally add pepper and salt. 



Add beef. Mix well and roast for 15 minutes. 



Transfer to a neat bowl, garnish and serve.

STEW



appam normally requires a nice side dish.. stew is one among the best side dishes ever for appam..


Serves : 6
Preparation time : 10-15 min
Cooking time : 15-20min


You need :

Beef : 500g 
Potato : chopped 1 cup
Carrot : chopped 1 cup
Green Peas : 1 cup 
Ginger : 1 medium piece chopped
Onion : 2 large chopped
Garlic : 6 pods
Green Chillies : 6
Turmeric Powder : 1/2 tsp
Chilli powder : 1 tsp
Crushed pepper : 1 tsp
Ginger Garlic paste : 2 tsp
Coconut milk : 2 cups
Vinegar : 2 tbsp
Curry leaves 
Oil to cook, salt to taste
Water as required

Spices to grind :
Cinnamon
Cardamom 
Nutmeg
Pepper
Fennel
Cloves

Method :

Cut stew meat and wash thoroughly. Drain excess water.
Add 1 tsp chilli powder, 1 tsp salt, 1/2 tsp turmeric powder, 1/2 tsp pepper powder, ground spices, ginger garlic paste and pressure cook the meat till 10 whistles or till it is done. Steam the potatoes,carrots and peas with salt. Extract coconut milk. Keep the first extract aside. Make 2 more extractions.

In a pan, heat oil, saute curry leaves, green chillies, garlic, ginger, onion. Add 1tsp coriander powder. Add the cooked veggies and fry for a minute. Add this to the meat, and add the coconut milk (2nd and third extractions), 1 cup of water and bring to a boil. Add the first extracted milk now.When the sides start boiling, add 2 tbsp vinegar. Don't let it boil. Serve hot with appam.

Discard meat from the recipe to get a veg stew.

FERMENTED RICE CAKE (APPAM)


on this xmas day wishing u all a merry xmas... appam - stew combination is the typical breakfast of all on this special day.. me too tried the same.. requires heavy parental guidance though.. 

appam is a really expert recipe to make.. thing is that if any one of the ingredient proportion is not right, then ur appam wont taste good.. so pls try this under parental guidance...

Serves : 6
Preparation time : 12hours
Cooking time : 10-15 mins


You need : 

Rice flour : 3 cups
Coconut Milk : thick milk 2 cups
Semolina : 3 tbsp
Milk : 1/4 cup
Sugar : 1 tbsp
Dry Yeast, Sugar :1/2 tsp
Luke warm water as required, salt to taste.

Method :

Mix rice flour, coconut milk and water in a bowl and make a thick batter. Take some warm water and add semolina and make a thick paste. Dissolve yeast in a little warm water and add sugar. Add the semolina paste and yeast mix to the batter well. Add required amount of water and stir well until the mix is loose. Make sure the batter is not too watery. Place this mix in a warm place overnight for fermentation. Add salt and milk and mix well. Make appam in  suitable pan...

VERSATILE NOODLES



Why this is called versatile noodles is just because it can be made as a non veg item or a veg item according to the user... :)

Serves : 3
Preparation Time : 10 - 15 min
Cooking Time : 20 - 30 min

You Need :

Chinese Plain Noodles : 300 g ( Can use maggi also. Better use plain noodles )
Chicken Breast : 2 large cooked and shredded (optional)
Eggs : 2 (optional)
Shallots : 2 Medium 
Cabbage : 100 g
Carrot : 50 g
Red Capsicum : 50 g
Green Capsicum : 50 g
French Beans : 50 g
Ginger Garlic Paste : 1 tbsp
Crushed Pepper : 3 tbsp
Tomato Sauce : 3 tbsp
Soya Sauce : 2 tbsp
Butter : 1 tbsp
Celery, Scallions : For garnish
Oil to cook, Salt to taste


Method :

Cook the noodles in boiling water so that its non sticky. Drain all the water and keep it aside.




Cut shallots and cabbage into thin slices. Chop the carrots and capsicum into small pieces. Make beans into thin juliennes. Beat egg with a little soya sauce. Chop celery and scallions.




Put oil in a pan and put ginger garlic paste, shallots, carrot, beans, pepper and soya sauce on high flame. Saute till tender. Lower the flame and put other veggies one by one and cook well. Add shredded chicken and beaten egg if required. Sprinkle salt to taste. Put some chopped celery and scallions and saute once more. Move the chicken-veggie mix to a plate.





Take another pan and heat butter. Add noodles and tomato sauce and mix well. Then add the chicken-veggie mix and mix slowly. Take out and garnish with celery and scallions. Serve hot. Accompanied by a side dish, tomato sauce, chilli sauce and vinegar.

EGG SLICES WITH MINCED CHICKEN, ONION AND PEPPER



Serves : 2
Preparation Time : 5-10 min
Cooking time 10-15 min

You Need :

Eggs - 2
Chicken mince - 1/4 cup
Onion - medium 1
Tomato - medium 1
Capsicum - small 1
Soya sauce, pepper n salt to taste

Method :

Beat eggs in a bowl with a pinch of salt and a little soya sauce. 



Cut onions, capsicum and tomato into small pieces.



Heat oil in a pan and roast the veggies and chicken with some crushed pepper. Keep it aside.



Pour half of the beaten eggs in a flat pan. Then evenly spread the sauted chicken veggie mix. After a min, pour the rest of the eggs and cook for 30 sec.Fold the opposite sides to the middle. Turn the omlette upside down and cook for another 30 sec. 




Take it out in a plate, cut into slices, garnish and serve.. best with bread toast n tomato sauce.

as day passes, i see more n more of this world.. and each day i eat several things.. and when i thought abt the cooks who cook it, what came to my mind ws ppl who arent that familiar with cooking.. ppl who only knows how to eat and not to cook.. thats the time when i thought my blog page can be a it different.. i know there are a lot of sites which help in cooking.. my blog is not at all meant to be like that.. this is just to show how easily these can be done.. and yeah.. i love cooking!!!

SCRAMBLED EGG




Serves : 1  
Preparation Time : 5-10min  
Cooking time 5-10 min

You Need :

Eggs - 1
Tomato - medium 1
Onion - medium 1
Green Chillies, pepper, salt for taste..

Method....

Beat egg in a small bowl with a pinch of salt and pepper. 
Chop the tomato green chillies and onion.







 Put oil in a pan and when oil heats up, saute the veggies for 2 mins in medium heat. Add the egg and scramble well... Serve hot... i had it with rice.. u decide what to eat with!!

ppl look.. im not at all good at reading books or writing blogs... and now u may ask why i am here.. its just for fun you know.. its been long that ive been hearing the word blog.. so thought i'd just check what the hell it is... and now i understand.. just a bunch of words... but there's something special in every bunch.. could see the difference when i read every blog... i thought of writing  a blog, then dropped.. i may write one later, but not now of course... right now im thinking abt a lil wierd thing to do on a blog.. u could see it before u read this.. so check it out!!
